Ingredients (serves 2)

  • 2 chicken breasts (3 oz / 85g each, cooked weight)
  • 2 cups broccoli, cut into florets
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper.
  2. Melt half the butter in a skillet over medium heat; cook chicken 6-7 minutes per side until cooked through. Remove and set aside.
  3. Add remaining butter and garlic to the skillet; cook broccoli 5-6 minutes until tender-crisp, stirring often.
  4. Return chicken to the pan to warm through, then serve.
