Ingredients (serves 1)
- 2 large eggs
- 1 cup spinach, raw
- 1 cup mushrooms, sliced
- 1 tsp butter
- Salt and pepper to taste
Instructions
- Melt butter in a small skillet over medium heat.
- Add mushrooms and cook 3-4 minutes until softened.
- Add spinach and cook until wilted, about 1 minute.
- Whisk eggs with salt and pepper, pour into the skillet, and scramble until just set.
