Ingredients (serves 1)

  • 2 large eggs
  • 1 cup spinach, raw
  • 1 cup mushrooms, sliced
  • 1 tsp butter
  • Salt and pepper to taste

Instructions

  1. Melt butter in a small skillet over medium heat.
  2. Add mushrooms and cook 3-4 minutes until softened.
  3. Add spinach and cook until wilted, about 1 minute.
  4. Whisk eggs with salt and pepper, pour into the skillet, and scramble until just set.
