Ingredients (serves 2)

  • 4 large eggs
  • 2 cups zucchini, sliced
  • 2 oz cheddar cheese, shredded
  • 2 tsp butter
  • Salt and pepper to taste

Instructions

  1. Melt butter in a skillet over medium heat. Add zucchini and cook 5-6 minutes until softened.
  2. Whisk eggs with salt and pepper; pour over the zucchini.
  3. Cook, stirring gently, until eggs are just set (3-4 minutes).
  4. Sprinkle cheddar over the top, cover briefly to melt, and serve.
